Lemony Grilled Shrimp Panzanella with Basil, Tomatoes and Mozzarella

One of our favorite summer dinners is a panzanella recipe we tried from Real Simple several years ago, and have continued to refine over the years. We had it for dinner last night, and it was the perfect meal for the warm evenings we’ve had this week.

If you’re not familiar with panzanella, it’s a Tuscan salad of stale bread, tomatoes and olive oil, plus various other ingredients depending on what’s in season at the time. The tomato juices and olive oil soak into the bread, creating a delicious melding of flavors.
